Jura
Désiré Rolet began making wine in the Jura in 1942. In 1958, his four children took over from their father, and their success allowed them to acquire prime old vine vineyards in the appellations of Arbois, Côtes du Jura, Étoile, and Château-Chalon. Since June 2018, the Devillard family, also winegrowers in Burgundy, along with the Flambert and Dupuis families, have acquired the Rolet estate. Under the guidance of the winemaker Cédric Ducoté, the wines show the same spirit as those of the Rolet family, authentically reflecting the Jura region. The estate vinifies only the grapes grown from their vineyards using sustainable and organic viticulture methods.
This bottling is made of 100% Chardonnay, sourced from various plots on the hillside lieu-dit of En Chagnon, in Montigny-lès-Arsures. The vines, with south-southeast exposure at 280 to 380 meters in elevation, are 30-plus years old and grow on soils of limestone bedrock, loose gravel and gray marl, all of which contribute to the richness and minerality of the wine. The grapes were hand-harvested and fermented using native yeasts. Fermentation and aging are carried out in barrel (30% new) for 10 months.
On the nose, the Rolet Chardonnay shows aromas of lemon peel and lemon curd, yellow apple, white peach, almond, and beeswax. With a round texture and medium-plus acidity, it will pair well with grilled fish, shellfish, a classic quiche, or, of course, comté.
